Softneck Garlic

Softneck garlic are varieties that have a soft stalk that can easily by cut or braided. The bulbs hold many uniquely-shaped cloves, wrapped in a think papery shell that get smaller toward the center. They tend to have a milder flavor and a longer shelf life. The silverskin variety of softneck garlic is what you typically see at the grocery store.

Lorz Italian

Artichoke variety brought from Italy by the Lorz family in the 19th century having a bold and spicy flavor.

Artichoke variety with a beautiful purple skin with a mild, savory flavor.

Inchelium Red

Artichoke variety with a smooth, full flavor and beautiful white and purple coloring. One of the most popular and award-winning garlics. •10-12 cloves per bulb

Early Italian Purple

Artichoke variety with mild flavor with rich tones, wrapped in a striped purple skin.

Hardneck Garlic

Hardneck varieties have a hard stem, which is more difficult to braid, and produce a scape, which is also full of garlicy deliciousness. They have bigger but fewer cloves which are easier to peel. Their flavor packs a punch.

Music

Porcelain variety with a robust flavor. Favored as ‘the choice garlic of garlic lovers.’ •4-6 large cloves

Chesnok Red

Purple Stripe variety full-flavored and loved for baking and roasting. Touted as ‘best all-around garlic.’

Spanish Rojo

Racambole variety with a strong, hot, and spicy flavor. Has large brown-red cloves and a marbled purple skin. •8-12 cloves per bulb

Russian Red

Racambole variety with a rich, musky flavor and very hot when eaten raw. Has large brown cloves and a brownish/purplish skin. Easy to peel! •8-12 cloves per bulb

Elephant Garlic

Although not a true garlic, elephant garlic are prized for their extra large cloves and soft garlic flavor.

Garlic Scapes

Garlic scapes are the tender bloom shoots harvested from hardneck garlic in late spring. Tasting between a mild garlic and green onion, these curly cues are great thrown in a stir fry or scrambled eggs, ground into a pesto, or sautéed on their own similar to asparagus. Only available for a few, short weeks each spring.

Fresh scapes are done for the year, but we are drying some so that you can enjoy them all year long. We use it like a garlicky parsley. It’s great on roasted potatoes, meat, sautéed veggies, eggs, and more!
